A Good Day

- Eating wise that is!

A couple of days ago I was walking past a cafe menu board in Takapuna & what caught my eye was the spinach, feta & chorizo omlette that was on the menu & it sounded good. This morning I decided that I wanted one - so I made one.... but I only registered about 5 minutes ago that I neglected to put the chorizo in (not that I really had time to faff around with chorizo at 8am this morning) so I had a spinach & feta omlette. Very nice it was too.

After having such a yummy salad for lunch yesterday, I decided that I would have another one for lunch today - just a bigger one this time with tomato & advocado added at well. I felt pretty full when I was walking up the road to collect DS from kindy!

With the rest of the family having meatloaf for dinner tonight, I decided that I was going to have chicken. This I slapped some butter & Piri-piri seasoning on & wrapped up in tin-foil, then baked in the oven for nearly an hour before setting under the grill - just to give the skin a little colour.

Just another day

Just another typical Monday morning I think. No bread for the kids lunches prompted a quick trip to the corner store & from there it was rush rush rush. 3 fried eggs eaten hurriedly between making sandwhiches & popcorn was not my idea of a perfect breakfast this morning. Still, it filled a hole.

Ahhhh, Lunch. A somewhat more laid back affair. I haven't had salad like this in a long time & it was nice. plenty of ham, some baby spinach, cucumber & mild blue cheese with my 'favorite' dressing! Yum.

Sadly, there are no pics of dinner tonight. It didn't even enter into my mind to take a photo - even though the camera was on the bench. Oh well, you'll have to make do with a few more words instead.... A pork loin chop (with the fat on of course), 4 small pieces of broccoli & pumpkin mash with plenty of butter & cheese (not to mention a little splash of cream when I was reheating it). I love the sunny colour of mashed pumpkin!

Now I am contemplating a piece of 85% Lindt chocolate. It's taken me a long time to adjust to such dark chocolate, but luckily 1 square is usually sufficient as opposed to a whole bar of milk chocolate in my previous life.

Eggstravaganza

Boy, did I do eggs today!
I sure love them, but not as much as this guy

Breakfast was a 2 egg omlette with 1 1/2 slices of cheese & half a sliced chorizo sausage at nearly 10am once everyone else was finally fed.

Lunch was brilliant but unfortunately I have no photos :( . I went for a picnic lunch with some friends in the park that is/was part of the Chelsea Sugar Refinery - kind of funny & ironic that 3 low carb lifestylers would choose a place such as that to eat lunch! What I can tell you is that I had some delicious Blue Cheese Quiche and some salad which comprised of baby spinach leaves, cheese & something that was a cross between ham & bacon (and yet I'm sure was neither of those things). Very yummy though! Dessert was my contribution to the affair - a coconut panna cotta/jelly type thing.

Which brings us to dinner - yes after all that lunch, I wanted dinner. The last remaining chorizo sausage from the fridge, 2 fried eggs & some salad greens (as if I didn't have enough at lunch!). That yellowy stuff is 'dressing'.

This will be dessert when I leave here. I fancy something a bit sweet tonight so I have some frozen berries waiting for me in a bowl. My crass upbringing dictates that I will eat them using nothing more than my fingers. Apparently this is permissable, but licking a plate is not - go figure!

Easy Street

How hard is it to make scrambled eggs? Well, let me tell you, it's taken me some time that's for sure!
Rather than have a rasher of bacon beside my 3 scrambled eggs, I put the bacon in it this morning. I like being able to stick stuff in one pot - saves on the washing up!

Now here is lunch - Fat Guacamole Devils - with a twist of 1/2 a finely diced chorizo sausage rather than the hot sauce (I don't know what the Americans call hot sauce but I use Tabasco).I think they would have been better if I had put the Tabasco in - never mind, they were still pretty good!

Dinner was in a word 'basic'. The 'Other Half' and the kids had potato fritters (sliced potato dipped in batter & deep fried). I had a grilled chicken breast with salad greens & some cherry tomatoes from out of the garden - still warm from the sun - hows that for fresh! I'm a bit partial to Heinz Salad Cream at the moment so I slathered about 2teaspoons over. Easy.

I'm waiting impatiently for my first Spaghetti Squash to mature - I've never eaten it before - let alone grown one & now it just won't hurry up and be ready. I go out & gaze lovingly at it each day but it's still green & stripy (my daughter thought it was a watermelon). I might play it some music tomorrow & see if that hurries it up...

Effortless

As I said last night, breakfast was going to be Meatza! Yes, I ate all that for my breakfast.

Lunch.
I took the esy way out & bought half a cooked chook from the supermarket.Probably pumped with all sorts of other 'stuff' to change it's texture & whatnot, but I wasn't in the mood for cooking. Served with a side of gardening magazine!

Happy Belly

Here's what I munched through today. Nothing flash - while I appreciate good food, I don't like mucking around with it. Time is usually also 'of the essence' too when you've got kids to send places (or pick up from places) or trying to trip you over because they're hungry & dinner isn't coming fast enough.


Breakfast.
3 fried eggs covered in cheese & put under the grill for a few minutes.


















Lunch
2 extremely small pork chops with some salad greens & a bit of mayo.



Dinner
Meatza! The base was made in a cake tin. What's pictured is half of what I made - the other 2 pieces will be breakfast in the morning.
